The Garden has been like a Tomato factory this Summer! I grew about 7 different varieties this year and we have been loving eating them fresh off the vine! Most of our friends and family that live near us all have Gardens as well so giving the extras away isn’t as easy as you would think!

I suck at running this week and a Vegan Curry recipe

This week was a big win on the clean eating and training. I got in all my runs, as planned and met all my nutrition goals.


Well not quite…….

Even though I got all my runs in, Friday’s 6.5KM and Saturday’s 8KM run were absolutely the worst! I had ZERO energy, “heavy legs”, and the SLOWEST pace I have ran in a long long time!

Mom’s 50th Suprise Party

Last Friday we packed up the car and headed to Kingston for the weekend! I was pretty tired even before we left since I worked all week and was up at 4:15 everyday…..

S’More Cookies

I had to share this delicious cookie recipe!


Shut Up!

And here it is!!

S’More Cookies

In the bowl of a stand mixed cream together

  • 1 Cup Unsalted Butter
  • 1 Cup Brown Sugar
  • 1 Teaspoon Vanilla (pure)

Once combined add 2 Eggs one at a time

Separately combine

  • 2 Cups Flour
  • 1/4 Cup Corn Starch(This is the secret ingredient that will give you soft chewy cookies)
  • 1/2 Cup Graham Crumbs (I made mine but you can use store bought)
  • 2 Teaspoons Baking Powder
  • Pinch of salt

Slowly add to mixer until just combined

Then add

  • 1 Cup Milk Chocolate Chips
  • 1 Cup Mini Marshmallows

Combine by hand

Wrap and chill dough for minimum one hour! (VIP Step… not skip)

Preheat Oven to 400C (Seams high but trust me)

Use a 1/8 of a cup measuring cup to portion cookies

Bake for approximately 8 minutes but keep a close eye. You want to them out about 2 minutes before you think they look done!

Cool on baking tray for a few minutes and then transfer to a wire rack to cool completely

And as long as you aren’t a moron like me you won’t burn them to a crisp…..



So I managed to make about a dozen that I didn’t turn to charcoal!


The ones that did turn out ok were delish……even though they aren’t much to look at……..

Banana Jam


  • Very ripe (I used frozen) Bananas (18 Bananas made 3 1/2L Jars)
  • Juice from 1 Lemon
  • 1/4 Cup Honey More or less depending on taste)
  • 1.5 tsp Cinnamon
    Cook minimum 20 Minutes but longer if needed to get he consistency you want.
  • Seal in jars…..Keeps well in the fridge for a couple weeks
    Great on oatmeal, in yogurt or even on toast with peanut butter!


Yep……You too will do a hip thrust when you taste it……


Working all weekend sucks

I hope everyone had a great Easter. I worked all weekend and unfortunately I got Zero yummy Easter dinner……


But don’t worry, I did manage to make myself a indulgent Apple Martini after work to enjoy while I watched Big Brother…..


I am supposed to be starting 5 days off today but I picked up an Overtime shift tomorrow.


Going to get out there today and do a 10k run, even though its freezing…..AGAIN! See I have quite a few runs coming up and one of them in particular I must be ready for! The Sporting Life 10 K on May 10. About 6 people that I work closely with are also running it. I may or may not have opened my huge mouth and made not one but TWO bets that I will beat certain people…..Do you ever talk and even as you are saying the words you want to take them back? Yeah……well welcome to my life!! Talked wayyyy to much shit this weekend!

My motivation behind these stupid friendly bets was that they will motivate me to get my butt out these and train! But they just got a bit out of control and the wagers got a little high!


So now that I can not get out of these bets I have no choice but to win. So I have about one month to get up to par!

Hopefully finally getting music put onto my Sony cordless MP3 player will help my runs. I have been using my phone for my music for a while since I broke my old MP3 player. And using the phone is just annoying. I am so sick of the cord and the arm band it is distracting. These new ones are light weight and fit great. Today will be my first run with them, even though I got them for my Birthday last August!


Today is meal prep day for the week, so you know like it or not I will be doing another post later today!

Homemade Coconut Butter

I am obsessed with all things coconut. I am not kidding….it is to the point that I need to be physically restrained from sucking suntan lotion out of the bottle……

By the way…..That says BURN not BUM….I didn’t even notice unitil after I posted that it looked like Bum…..


Homemade Coconut Butter is one of my favorites. You can use it on so many things. I add it to oatmeal, on protein pancakes, in a curry, on fruit or even in my coffee!

So simple and easy to make.

Add unsweetened coconut flakes to a food processor and just let ‘er rip. You will have to stop it and scrape the sides once in a while. It will take about 10 minutes depending on your processor.

Waiting is the hardest part

Once it is a nice smooth consistence pour it in a mason jar and store at room temperature. It will naturally firm up but gently warming it up will malt it down quickly.

Deliciousness in a jar

You will go through this stuff like crazy! It is completely addictive.

Here is a great way to try it……

“Oatmeal” Minus the Oats

1 tbsp ground flaxseed
1 tsp ground cinnamon
1 banana, mashed
3/4 cup liquid egg whites (or 3 egg whites)
1/2 cup unsweetened almond milk (add more if desired)
1/2 tsp vanilla extract

1.Whisk together egg whites and almond milk and then stir in walnuts, ground flax, banana, vanilla extract, and cinnamon; blend well.
2.In a medium saucepan, warm the mixture on the stove, stirring frequently, until the “oatmeal” reaches the desired consistency; this should only take a few minutes.
3.Top with berries, nut butter, seeds, or whatever else you want.
