This summer has been an attempt of balancing work, running, eating healthy and events.
One of my favorite events every summer is my beastie’s Birthday!!!!
And by party I mean 8 of us got all dressed up and headed to dinner on a patio on the lakeshore.

We found a good last minute deal to Cuba……
But there was one problem……
This week has been a bit of a write off. Starting the week off exhausted just had me completely out of routine and lacking motivation.
I did do 4 runs outside this week but they were all pretty short…..No long run for me this week! 2 of the runs were at work with one of my partners…The other two were this weekend on my days off……

Last Friday we packed up the car and headed to Kingston for the weekend! I was pretty tired even before we left since I worked all week and was up at 4:15 everyday…..
My Stepdad and I had been planning my Mom’s surprise 50th Birthday Party for a couple months and it was Father’s Day weekend……so definitely a busy couple of days laid ahead!
I decided to not take Overtime today so I could get one last long run in before the Nike Woman’s 15K this coming Sunday! When I woke up at 7 am and it was pouring rain out……..
I had to share this delicious cookie recipe!
And here it is!!
In the bowl of a stand mixed cream together
- 1 Cup Unsalted Butter
- 1 Cup Brown Sugar
- 1 Teaspoon Vanilla (pure)
Once combined add 2 Eggs one at a time
- 2 Cups Flour
- 1/4 Cup Corn Starch(This is the secret ingredient that will give you soft chewy cookies)
- 1/2 Cup Graham Crumbs (I made mine but you can use store bought)
- 2 Teaspoons Baking Powder
- Pinch of salt
Slowly add to mixer until just combined
- 1 Cup Milk Chocolate Chips
- 1 Cup Mini Marshmallows
Combine by hand
Wrap and chill dough for minimum one hour! (VIP Step…..do not skip)
Preheat Oven to 400C (Seams high but trust me)
Use a 1/8 of a cup measuring cup to portion cookies
Bake for approximately 8 minutes but keep a close eye. You want to them out about 2 minutes before you think they look done!
Cool on baking tray for a few minutes and then transfer to a wire rack to cool completely
And as long as you aren’t a moron like me you won’t burn them to a crisp…..
So I managed to make about a dozen that I didn’t turn to charcoal!
The ones that did turn out ok were delish……even though they aren’t much to look at……..
Since we were up until the wee hours of the morning on Friday night/Saturday morning I was kinda rushed to get everything done before we headed to KFG’s house for the fish fry! Staying up way to late and having wayyyy too much wine=dehydration and dragging my ass to get out the door!
I sat on the front step for about 10 minutes before I got up the energy to leave…..It was about 25C and the sun was shining so that helped!
