Soba Noodle Bowl

I am not a big pasta fan but I love me some Soba Noodles!!!!

Soba Noodle Bowl

I put my cooked noodles in the bottom of the bowl….

To them I add

• Diced and browned tofu (1 package)
• Onions softened with 4 garlic cloves and a one inch piece of pealed and grated ginger
• 1 large bunch of Swiss chard (stem out and cut up)
• 1 Red pepped sliced thin

Top the noodles with a scoop of the cooked mixture

Fill with hot vegetable broth and top with

• Green onions
• Cilantro
• Basil
• Pickled ginger

This will warm you to the core!
