I saw some DELICIOUS looking Lemon Poppy Seed Muffins at the Bakery today!
Yep…..So I thought I would make some…..with a few tweaks!
I figured Vegan, Gluten Free Lemon, Coconut and Chia Muffins!
- 1/2 cup melted coconut oil
- 1/2 cup coconut sugar
- 1 tsp pure vanilla
- 1 “flax egg”
- 3 cups unsweetened cashew milk
- 1 cup brown rice flour
- 1 cup coconut sugar
- 1/4 cup chia seeds
- 1/4 cup hemp seeds
- 2 tsp baking powder
Add dry to wet and mix……
Pre set oven to 350C and spray muffin tin with coconut oil spray.
This makes 12 Muffins….They took almost 30Min to cook as they are pretty dense and take a while to set up with no gluten or eggs to bind them!
Let cool in the pan before taking them out……Seriously…….until completely cool….Why you ask?
